Great article, Tim. I grew up baking biscuits with White Lily flour. It does make a big difference, but I didn’t know about the soft wheat vs. hard. I’ve also used White Lily for cake recipes that turn out delish (sometimes split 1/2 cake flour with WL.) Let me know how your biscuits turn out. I’ve also been using an organic Arrowhead flour that’s also light, great for muffins et all. Baking blessings!! 🧁😎🧁
